{"id":522,"date":"2015-08-05T10:36:21","date_gmt":"2015-08-05T10:36:21","guid":{"rendered":"http:\/\/www.youpiceno.it\/en\/?p=522"},"modified":"2015-07-22T09:11:43","modified_gmt":"2015-07-22T09:11:43","slug":"non-chiamatelo-scorzone","status":"publish","type":"post","link":"https:\/\/www.youpiceno.it\/en\/food-and-wine\/non-chiamatelo-scorzone.html","title":{"rendered":"Non chiamatelo Scorzone"},"content":{"rendered":"<p><a href=\"https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/03\/PSC2015ok.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-2354\" src=\"https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/03\/PSC2015ok-450x320.jpg\" alt=\"PSC2015ok\" width=\"450\" height=\"320\" \/><\/a>The<strong> truffle<\/strong>, in its many varieties, is widespread in Piceno,<strong> particularly in the high hill and mountain areas at the heart of the GAL Piceno district, <\/strong>and is one of its most valuable resources for the promotion of the territory and its products of <strong>excellence. <\/strong><\/p>\n<p><strong>\u201cNon chiamatelo Scorzone\u201d is an event dedicated to the summer truffle<\/strong> (Tuber Aestivum Vitt) and the <strong>uncinatum <\/strong>variant (Tuber Uncinatum Chatin), a truffle species easier to find throughout the year, since it can be picked from June to August in summer, and from October to December in winter.<\/p>\n<p>It is a variety with a large growth range and sometimes reaches remarkable sizes, weighing up to of 600\u2013700 grams. The surface colour varies from dark grey to black, with very pronounced pyramidal warts that have earned it the name of \u201cscorzone\u201d, or \u201cthick skin\u201d. The white gleba in unripe specimens then turn a nutty brown and the mild, pleasing aroma is quite mushroomy.<\/p>\n<p><a href=\"https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/07\/70x100PSCok.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-2386\" src=\"https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/07\/70x100PSCok-420x600.jpg\" alt=\"70x100PSC\" width=\"420\" height=\"600\" srcset=\"https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/07\/70x100PSCok-420x600.jpg 420w, https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/07\/70x100PSCok-245x350.jpg 245w, https:\/\/www.youpiceno.it\/en\/wp-content\/uploads\/sites\/4\/2015\/07\/70x100PSCok.jpg 1200w\" sizes=\"auto, (max-width: 420px) 100vw, 420px\" \/><\/a>The event is held the first week in <strong>August (from 5 to 9)<\/strong>, in <strong>Force<\/strong>, one of Ascoli\u2019s most successful areas for cultivation and picking of this precious underground mushroom. The name of the event is also a wakeup call because until recently the summer truffle was wrongly considered the poor relation of other species.
